Ingredients

For 1 servings

  • 3 large Eggs
  • 1/4 cup Onion, finely chopped
  • 1/4 cup Tomato, finely chopped
  • 1 (optional) Green chili, minced
  • 2 tbsp Fresh coriander, chopped
  • 1/4 tsp Turmeric powder
  • 1/4 tsp Red chili powder
  • 1/2 tsp Salt
  • 1 tbsp Butter or oil

Instructions

  1. Crack the eggs into a bowl. Add onion, tomato, green chili, coriander, turmeric, chili powder and salt.

  2. Whisk vigorously for 30 seconds until frothy and fully combined — this makes the omelette fluffy.

  3. Heat butter in a non-stick pan over medium heat until it foams.

  4. Pour in the egg mixture and tilt the pan to spread it evenly.

  5. Cook 2-3 minutes until the edges set and the bottom is golden. Flip and cook 1 more minute.

  6. Serve hot with toast, pav or roti.

Frequently asked questions

How do I make my omelette fluffier?

Whisk the eggs hard for 30 seconds to fold in air, and cook on medium heat. A splash of milk or water also creates steam that puffs the omelette.

Can I make a masala omelette without onion and garlic?

Yes. Skip the onion and add extra tomato, coriander and a pinch of asafoetida (hing) for savory depth — a common Jain-style variation.
