Ingredients

For 1 servings

  • 1/2 cup Rolled oats
  • 4 (about 130ml) Egg whites
  • 1 Whole egg
  • 3/4 cup Milk of choice
  • 1 small Ripe banana, mashed
  • 1/2 tsp Cinnamon
  • Pinch of salt
  • 1 tbsp / handful Peanut butter and berries, to top

Instructions

  1. Combine oats, milk, mashed banana, cinnamon and salt in a saucepan over medium heat.

  2. Cook 4-5 minutes, stirring, until the oats are soft and the mixture is thick.

  3. Whisk the egg whites and whole egg in a bowl, then pour them in while stirring constantly.

  4. Keep stirring for 2 minutes as the eggs cook into the oats — they turn the porridge impossibly creamy and fluffy.

  5. Once no raw egg remains and the oats are billowy, transfer to a bowl and top with peanut butter and berries.

Frequently asked questions

Do eggs taste weird in oatmeal?

Not when cooked properly — the eggs completely disappear into creaminess, like a custard. If you taste egg, the heat was too low or you under-stirred.

How much protein is in egg white oats?

This recipe delivers about 32g of protein per bowl from the egg whites, whole egg and milk — roughly double a standard bowl of oatmeal.
